Description

I was tired of spending big bucks on fresh-made pico at the grocery store, so I looked at the ingredients and concocted this recipe. It’s enormous not because I love pico (it’s for my husband), but because I was too lazy to divide up the bag of frozen corn. Weight Watchers scores 1/4 cup of this at zero points. It yields about ten cups of pico total. (That makes 40 servings.)

Ingredients

  • 1-½ pound Tomatoes, Diced
  • 1 whole Large Vidalia Onion (or Other Onion, If You Like)
  • 1 can Black Beans, Drained And Rinsed (15 Oz. Can)
  • 12 ounces, weight Frozen Yellow Corn, Thawed
  • 2 Tablespoons Cilantro, Chopped (more Or Less - To Taste)
  • ¼ cups Lime Juice, Unsweetened, More Or Less To Taste

Preparation

1. Combine tomatoes, onions, beans, and corn in a large mixing bowl.

2. Fold in the cilantro.

3. Pour lime juice over the mixture, then gently stir again.

Store in the fridge in airtight containers.

Note: I do not own a food processor right now, and so I cut up the tomatoes, onions, and cilantro by hand. (Shocker, I know.) If you have a food processor, then, obviously, your prep time will drop dramatically.

Hubby loves his pico and taste-tested this one for me. He gives it two thumbs up. In addition to scarfing this up with tortilla chips, it would also make a terrific salad topping instead of dressing. Excellent stuff if you’re watching your weight.
