Description

The most amazing and tangy guacamole in the world!

Ingredients

  • 3 whole Avocados
  • 1 whole Meyer Lemon, Juiced
  • ⅓ cups Chopped Chives
  • ¼ cups Crumbled Goat Cheese
  • Salt And Pepper

Preparation

Combine all ingredients in a large bowl, except the goat cheese, and mash with a fork until half smooth and half chunky. Toss the goat cheese in at the end and serve. Sprinkle with finishing salt and pepper.

lesia, I just made this last night and used a regular lemon. I would try using half a regular lemon first, then add more to taste. It was quite lemony. Still delicious, though!

Any suggestions for a substitution for the meyer lemon, I can never find them.

I used a regular lemon (and only the juice of about 1/2 instead of a whole) and used a red onion since I didn’t have chives on hand- but this was delicious! I would have never thought to use lemon over lime, or add goat cheese- loved it!

My avocados were perfectly ready for this yesterday. Oh, yum! I feast on avocados this time of year when they are so scrumptious and make many varieties of guac. This is a standout.
