Description

Cream puff pastry filled with awesome chicken salad. You could do half with chicken salad and half with whipped cream for a little lunch/dessert. These are great for bridal/baby showers.

Ingredients

  • FOR THE PUFFS:
  • 1 cup Water
  • ½ cups Butter
  • ⅛ teaspoons Salt
  • 1 cup Flour
  • 4 whole Eggs
  • _____
  • FOR THE CHICKEN SALAD:
  • 2 cups Cooked Chicken, Chopped
  • ¼ cups Red Onion, Chopped
  • 1 stalk Celery, Chopped
  • 1 Tablespoon Raisins
  • 2 teaspoons Dijon Mustard
  • ⅓ cups Mayonnaise
  • ¼ cups Plain Yogurt
  • ½ teaspoons Salt
  • ¼ teaspoons Dried Dill

Preparation

For puffs:
In medium-sized saucepan combine water, butter, and salt. Boil. Add flour all at once and stir vigorously. Cook and stir until mixture forms a ball. Remove from heat and cool 10 minutes. Add eggs one at a time, beating dough until smooth after each addition.

Heat oven to 400 degrees.

Drop dough by heaping tablespoons onto greased baking sheet. Bake 30-35 minutes or until golden. Let cool.

For chicken salad:
Just mix all ingredients together.

To assemble, cut tops from puffs and remove the dough from inside. Fill with chicken salad and replace tops.
Enjoy!
