Description

A sweet snack mix, with a hint of salt, that is oh, so addicting!

Ingredients

  • 17 ounces, weight Box Crispix Cereal
  • 1 can Salted Cashews
  • A Pinch Or Two Of Salt
  • 1-½ cup Butter (No Substitutes)
  • 1-½ cup Brown Sugar
  • ⅓ cups Light Corn Syrup
  • ¼ teaspoons Baking Soda
  • Wax Paper

Preparation

In a large roaster (or a really big bowl) put dry Crispix cereal, the can of cashews and a small pinch or two of salt. Mix well. Put aside. (You will be using this bowl or roaster to do the mixing in, not the cooking.)

Melt the butter, brown sugar and corn syrup in a large Pyrex glass bowl (one that will fit in your microwave and hold the cereal mixture too!), on high for 4 minutes. Stir. Continue to microwave until mixture boils. Add 1/4 tsp. baking soda. Stir. Cook on high in microwave 2 more minutes.

Pour hot caramel mixture carefully over cereal. Stir. Transfer everything back into Pyrex bowl. Cook in microwave 1 1/2 minutes on high. Stir (I put it back in the roaster to stir, and the put it back in the microwave bowl). Microwave 1 1/2 minutes. Stir (again, I transferred back and forth). Microwave 1 1/2 minutes more on high. Stir.

Spread on wax paper to cool. Break apart and store in an airtight container for up to 1-2 weeks, but it will get eaten before then! Enjoy!
