A Kentucky tradition from my hometown of Louisville (pronounced Lu-a-ville by the locals). As a child, my grandma made me countless benedictine sandwiches. As an adult, it surprised me to find out that it was a local treat & that no one outside of Louisville seemed to know about it! Simple but tasty!
Peel & seed cucumber. Grate or spin in food processor. Ditto for the onion.
Drain excess liquid from cucumber. Combine grated cucumber, onion, salt, & softened cream cheese.
Stir in green food coloring if using.
Spread on crustless white bread (think tea sandwiches). Enjoy!

I am so excited to find this recipe. I am a Louisville native transplanted to Alabama…when I moved here to go to college several years ago…I think the grocery store clerk thought I was crazy when I asked where the benedictine was…so glad to find this so I can FINALLY satisfy the craving.

Maybe it’s a Kentucky thing. We do benedictine in Lexington, too!

My very best friend introduced me to benedictine years ago. She was from Lo i ville too. I always think of her when I have this yummy spread.
