Description

This is comfort food at its best. No long hours in the kitchen, but full of flavour. A warming meal ready in 30 minutes.

Ingredients

  • 7 ounces, weight Brie (4 Pieces Of 50 Grams)
  • 24 slices Pancetta (thin)
  • 1-⅞ ounces, weight Unsalted Butter
  • 1 Tablespoon Olive Oil
  • 1 whole Onion, finely chopped
  • 1 clove Garlic, Grated
  • 1 whole Granny Smith Apple, Grated
  • 1 pound, 1-⅔ ounces, weight Savoy Cabbage, Finely Sliced

Preparation

1. Preheat the oven to 22o degree C.

2. Cover the pieces of brie with as much of the pancetta as you need to cover the brie entirely. Place them in the freezer for 10 minutes and then place on a baking tray.

3. Bake them in the oven for 6-8 minutes or untill the pancetta is crispy.

4. Cut the remaining pancetta in fine strips. Melt the butter and oil on medium heat and add the finely chopped onion and the pancetta and fry for 2-3 minutes.

5. Add the garlic and the apple (grated) and stir for 1 minute.

6. Now add the finely sliced savoy cabbage and fry for another 5-6 minutes. Season to taste with salt and pepper.

7. Divide the cabbage over 4 plates and place the piece of brie on top. Drizzle with some olive oil and serve with homemade bread.
