I’ve made this for years! My photos don’t do it justice. It’s really easy and really good.
Preheat oven to 350 degrees.
Prepare crust: In a food processor, grind chocolate cookies. I use Teddy Grahams, but any wafer cookie would do. Add butter and process until well blended. Press into the bottom of a springform pan and refrigerate while preparing the filling.
Filling: Blend cream cheese Add sugar and sour cream. Mix well and add eggs and vanilla. Blend until smooth then gently fold in 1 cup of chocolate chips. Pour filling into the pan and top with the remaining chocolate chips (about 1/2 cup). Bake for 30-40 minutes then turn oven off and let sit for 1 hour. Remove from the oven and refrigerate for 3-4 hours.
