Thanksgiving Mashed Potatoes

Description

Not only are these light, creamy, and delicious, but they can be made a few days ahead of time. Then, on The Big Day, cook them early and set them aside. They will stay hot for hours!

Ingredients

  • 3-½ pounds Potatoes
  • ½ cups Finely Chopped Onion
  • 2 Tablespoons Butter
  • 2 cloves Garlic, Minced
  • 8 ounces, weight Cream Cheese
  • ½ cups Milk
  • 1 dash Salt, Black Pepper, And White Pepper, To Taste
  • 1 whole Egg

Preparation

Peel potatoes, chop into large chunks, and cook until tender in well-salted water.

While potatoes are cooking, saute chopped onion in butter for a few minutes, just to soften and sweeten the onion. Add minced garlic and saute one more minute. Remove from heat.

Drain cooked potatoes. Add onions and garlic. Add cream cheese and milk. Whip really well with an electric mixer. Season, taste, and adjust seasonings. Let cool to just warm and add egg. Use mixer again to incorporate the egg.

Put into a buttered casserole dish. Mashed potatoes can now be baked or placed into the refrigerator for 2-3 days.

To cook: Bake, covered, at 350 degrees for one hour. Remove cover for last 10-15 minutes to get a nice golden crust. Remove from the oven. Cover. And set aside. These will stay hot for hours until ready to serve!

Wow, these sound delicious! I neve go for the mashed potatoes, because they seem so bland. But these seem to have added flavor and extra body! Thanks for a great idea :)

What a great recipe! I made this after thanksgiving to try, and I was short on time so I didn’t add the egg and bake for an hour…I just ate it right after I mixed everything in the electric mixer, and it was really good! I used two really large cloves, and the garlic taste seemed a little overwhelming (and I love garlic). Maybe it had to do with the fact that I didn’t bake it, either way I will be using this recipe, and I’ll bake it next time! :)

This was SO perfect for Thanksgiving. I made it the day before and baked it the morning of, yet it was one of the best dishes that afternoon. Smelled amazing with the garlic!

Great recipe for mashed potatoes! Perfect to make ahead — I actually recommend doing just that. It was delicious when I tasted for seasoning, and simply wonderful when I baked it two days later. Creamy, yummy, with just a hint of tang from the cream cheese — dreamy with gravy or butter, but it really doesn’t need either. Thank you for the recipe!

These are great for a special occasion for every night dinner! LOVED Them! They had a ton of flavor. This was the first year of success with mashed potatoes. I will be using the recipe in the future.
