LOVE this recipe! It has saved me tons of time for our Sunday pancake breakfasts! You make it once and it lasts and lasts.
Mix all the “pancake mix” ingredients together well and store in an airtight container. If you really love pancakes or have a large family you can double the recipe (for the mix) and just store it in a larger container. SO ADAPTABLE!
When you are ready to make pancakes add the remaining ingredients on the above list, and stir together well. At this point (especially if you have the chocolate chips and nuts in here) you can add one diced banana. Really! It’s like a chocolate nutty monkey type thing.
Now make sure your pan is buttered and nice and hot (medium high) and spoon batter onto the pan. Then wait until you see little bubbles or when the edges are dry. Then FLIP ‘em and cook the other side! And there you have it, ladies and gents. Enough to make 16 pancakes, enough to feed a family of four!
Tip: If you have any leftovers, freeze them. On weekday mornings when you are in a hurry, put them frozen into your toaster and TADA, pancakes again!
