Chocolate cupcakes with a cream cheese middle.
Preheat oven to 350F.
Filling: Beat cream cheese, egg, sugar and salt until smooth. Stir in chocolate chips and set aside while mixing the batter.
Cupcakes: Combine dry ingredients. Stir in liquid ingredients until mixture is smooth; do not overmix. Fill paper-lined cupcake tins halfway full. Then put 1 heaping teaspoon of the filling mixture in the center of each cupcake. Bake approximately 23 minutes. Watch closely and do not overbake.

I make these as well, but usually top with cream cheese icing and call it Breakfast Muffins!( hee hee any excuse)

My mom has been making these for years, and I recently got the recipe from her. We call them black-bottom cupcakes–one of my favorites!
