Description

My Grandmother made this cake frequently to take to people in her community when they were sick, lost a loved one, etc. This recipe is special to me because when I make it I am reminded of how my Grandmother loved and cared for those around her.

Ingredients

  • 1-½ cup Oil
  • 2 cups Sugar
  • 4 whole Egg Yolks
  • 2-½ cups Self-Rising Flour
  • 2-½ teaspoons Cinnamon
  • 1-½ teaspoon Nutmeg
  • 1 can Crushed Pineapple With Juice, Small Can
  • 1 cup Pecans
  • 4 whole Egg Whites, Beaten

Preparation

Mix first 3 ingredients:
*oil
* sugar
* egg yolks

Add dry ingredients:
*flour
* cinnamon
* nutmeg

Add pineapple with juice and nuts

Add in beaten egg whites.

Bake at 325 degrees for one hour & 15 minutes.

Sorry I left out the pan instructions:

Grease & flour (or I just spray the pan with Baker’s Joy cooking spray and it works just as well) a bundt pan. I love using Pampered Chef’s stoneware bundt pan but you can cook it in whatever bundt pan you prefer.

What type of pan does this cake get baked in? Does the pan need to be greased and floured, or will spray be sufficient?
