Description

This taco soup has amazing flavor! Personally I’m not a huge fan of kidney beans, but with this recipe I ate them all! To make it gluten free, just make sure your “taco seasoning packet” contains no gluten!

Ingredients

  • 1-½ pound Ground Beef
  • 1 whole Medium-sized Sweet Onion, Chopped
  • 5 sticks Chopped Celery
  • 1 can Tomato Sauce (15oz)
  • 1 can Diced Tomato (28 Oz)
  • 2 cans (15 Oz. Size) Kidney Beans, Drained And Rinsed
  • 2 cans Cans Of Yellow Corn, Included Juice (15 Oz Each)
  • 2 packages Taco Seasoning (1 Oz Each)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder (optional)
  • Optional Toppings: Sour Cream, Cheese, Etc

Preparation

Cook and brown the meat in a pot, adding the onion at the very end. Once the onion is cooked and translucent, drain all the fat.

Next, add all the rest of the ingredients (except toppings) into the pot.

Let this mixture come to a boil and simmer on medium/low for 1 hour, or longer. I couldn’t wait longer than an hour and it was perfect, but I’ve been told the longer this soup cooks on the stove, the better it gets!

Don’t forget to serve it with a dollop of sour cream and cheese on top, with corn bread on the side! Yummy!!!

I have a similar recipe and it works great in the crock pot! We like to eat it with tortilla chips instead of spoons!

this looks great and I can’t wait to try it.. I wonder how it would be if you transferred it all to a crock AFTER you browned the meat..

Delicious!
We are picky eaters though so I used all of the same ingredients except I did not use onion or celery and it was still delicious! Loved it!!

I also made the entire thing in the crockpot. Browned the meat on the stove top first. Then combined everything in the crockpot. Set to low from 12pm-6pm.

Served with cornbread and Fritos, sour cream and TONS of shredded cheese. Makes a huge amount so we had lots of leftovers. I even froze some for the upcoming chilly, Kansas winter!
