Description

It doesn’t look like much, but you will be blown away at how good this dip is and how easy it is to make too! This is bacony, creamy and cheesy goodness spread onto bread that everyone will fall head over heels for. Guaranteed!

Ingredients

  • ¼ pounds Smoked Bacon
  • ¾ cups Diced Yellow Onion
  • 2 cloves Garlic, Minced
  • 4 cups Collard Greens, Chopped (stems Removed)
  • 1 cup Grated Medium Cheddar Cheese
  • ¼ cups Grated Parmesan Cheese
  • ¾ cups Sour Cream
  • ½ cups Real Mayonnaise (no Low Fat Versions, Please)
  • Salt And Pepper, to taste
  • 1 loaf French Bread, Warmed And Sliced

Preparation

Preheat skillet to medium heat. Slice bacon into 1/4 inch pieces. Cook in heated skillet until browned and slightly crispy. Remove from pan and place on paper towels to drain. Set aside.

Pour off excess bacon drippings from pan, leaving 2 tablespoons. Place pan back on heat. Saute onions and garlic until tender, about 5 minutes. Stir in collard greens and cook another 3-5 minutes until completely wilted. Take off heat and pour into a large bowl. Stir in remaining ingredients with sauteed vegetables. Pour into a small greased oven save dish. Bake at 350F for 30 minutes or until edges have browned and dip is bubbly.

Serve hot with sliced French bread.

I love the recipe – collards, bacon, cheese, garlic, onion!
I envision this dip for holiday meals and during football games.

Made this for a New Years Eve party with all age groups present (kids to adults), everyone loved this dip. The bacon makes it extra yummy and the collards bring you luck (or is it wealth?) for the new year. Wonderful change from the typical artichoke and spinach dip.
