These cupcakes are so moist and delicious. You can use the icing you prefer or none, they are great either way. I used a buttercream icing. I have heard you can substitute butter for the shortening, but I haven’t done that yet. These are best when the bananas are over-ripened.
Cream together shortening and sugar. Add the eggs and continue to mix. Stir in all remaning ingredients, adding the bananas last. Once all ingredients have been added, beat well for an additional 2 minutes.
Bake at 350 degrees for 30-35 minutes. Cool completely and ice with desired icing.
