My go-to recipe for French bread in the bread maker. You can also make it as a traditional loaf.
Place all ingredients in bread maker pan in the order given. Set bread machine to 2-pound loaf size, and a basic setting.
For a traditional loaf, place ingredients in bread maker pan in the order given and set the machine to dough. When the dough is done, remove from the pan and knead 20 times. Instead of kneading by hand, I leave the dough in the pan and start the dough cycle again until it is kneaded. Shape into a loaf and make about 6 cuts, 1/2 inch deep in the top of the loaf. Cover and let rise for 1/2 hour. Then bake at 350 degrees F for 30-40 minutes.

Hi… quick question: Your prep time says “10 minutes” but the dough cycle (at least in my machine) is 90 minutes. You say to put the ingredients through the dough cycle (twice!). Do you mean that we should take the dough out of the machine before the dough cycle is done? Thanks.

This is a very nice bread. I made a batch yesterday for the first time. . . I am on the third batch. This batch I’ll be turning into rolls for dinner today! So very yummy.

This bread is AMAZING! I used the dough setting on the breadmaker and added 2 tsp. of vital wheat gluten along with the yeast yielding great results. Delicious with soup, a nice crusty loaf with a soft interior.
