A delicious pound cake with zesty lime flavor.
Heat oven to 350 degrees F.
In a small mixer bowl beat egg whites at high speed, scraping bowl often, just until stiff peaks form (2 to 3 minutes). Set aside.
In large mixer bowl combine 2 cups sugar and butter. Beat at medium speed, scraping bowl often, until creamy. Add egg yolks and continue beating until creamy.
In a small bowl stir together flour and baking powder.
Reduce mixer speed to low. Continue to beat the creamed mixture, gradually adding flour mixture alternately with milk, until well blended. Add lime zest and lime juice. Continue beating until well mixed. By hand, gently stir in egg whites.
Pour batter into greased and floured 12-cup Bundt pan or 10-inch tube pan. Bake for 50 to 65 minutes or until toothpick inserted in center comes out clean.
In a 1-quart saucepan stir together sugar and lime juice. Cook over medium heat, stirring occasionally, until sugar is dissolved. With a toothpick, poke holes in top of cake; pour glaze over cake. Cool 15 minutes; then remove cake from pan and cool completely on a wire rack.
Serve with fresh strawberries and a dollop of whipped cream.

I made this cake and loved it. Now I’ll have to make it for my son. He loves lemon and lime as much as I do.

Yes I always use all purpose flour. I just never think to buy cake flour. I live in the boondocks, so I buy my flour in 25 pound sacks and use it for everything. I am sure it would be even better with the cake flour, let me know!

Do you always bake with all purpose flour? I hardly ever use anything other than cake flour. With this recipe do you think it will make a difference? Must try! I love the combination of Cake, Lime and Strawberries and cream. Sounds Yummy.

We do this with lemon cake, and have it for breakfast. I cannot wait to try lime cake, sounds yummy!!
