Description

These are the most delicious light and fluffy savory biscuits. I might go so far as to say they taste a bit like the ones from Red Lobster, if you brush with generous amounts of garlic butter before baking.

Ingredients

  • FOR THE BISCUITS:
  • 2 cups Flour Mix *(see Recipe For Mix Below)
  • 1 teaspoon Guar Gum
  • 1 teaspoon Salt
  • 4 teaspoons Baking Powder
  • ¼ cups Cold Butter, Cut Into Cubes
  • ¾ cups Milk
  • 4 whole Green Onions, diced
  • ½ cups Shredded Cheddar Cheese

  • FOR THE OPTIONAL TOPPINGS:
  • ¼ cups Butter
  • 1 clove Garlic, Minced
  • _____
  • FOR THE FLOUR MIX:
  • 2-½ cups Starch (I Use Equal Parts Potato And Tapioca Starch)
  • ½ cups Sorghum Flour
  • ½ cups Brown Rice Flour
  • ½ cups Almond Meal

Preparation

In a large bowl mix together the flour mix, guar gum, salt, and baking powder. Cut in the butter until you have small pea sized pieces. Pour in the milk, add the green onions and cheddar cheese. Stir until the dough comes together and is all incorporated. It will be sticky.

Pile the dough onto a non stick or greased cookie sheet. Form dough into a rectangle and roll out to about 1 1/2 inches thick. Sometimes it’s easiest to use wet hands to do this.

Divide into 6 large square biscuits and move the biscuits to evenly space them on the prepared cookie sheet, about 2-3 inches apart. Bake in a 375º preheated oven for 10-12 minutes until the tops just start to become golden.

**Optional – If you would like a bit more kick (Red Lobster flavor) to your biscuit, in a small saucepan add the butter and garlic and heat over very low heat while you assemble your biscuits. Just before you put them in the oven brush the tops of each biscuit with garlic butter then bake.

Flour mix: Mix together all ingredients and store in an air tight container for use in all your gluten free baking needs.
