Cakey, delicious gluten-free chocolate chip cookies.
Whisk together flour, xanthan gum, baking soda, salt and cinnamon in a bowl. In a large mixing bowl, cream together shortening, applesauce and sugars. Add eggs and vanilla. Mix until smooth. Mix in dry ingredients. Fold in chocolate chips.
Chill dough for at least 15-30 minutes. While dough is chilling, preheat oven to 350F. Drop by tablespoonfuls on a cookie sheet. Bake 8-10 minutes. Let cool a couple minutes before transferring to a wire rack to cool completely.
