Description

Delicious coffee cake studded with chocolate chips!

Ingredients

  • FOR THE STREUSEL TOPPING:
  • ⅓ cups Flour
  • ⅓ cups Oats
  • ⅓ cups Sugar
  • ¼ teaspoons Salt
  • ½ teaspoons Vanilla
  • ¼ cups Butter, Melted
  • _____
  • FOR THE CAKE:
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Butter, At Room Temperature
  • 1 cup Sugar
  • 1 Tablespoon Vanilla
  • 2 whole Eggs
  • 1 teaspoon Instant Coffee
  • 1 cup Sour Cream
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 350F. Spray a 9×9 inch pan with non-stick cooking spray.

To make streusel:
In a small bowl mix together the flour, oats, sugar, salt, vanilla, and butter. Set aside.

To make cake:
Mix together the flour, baking powder, baking soda, and salt. Set aside.

Cream the butter and sugar in a large bowl. Add in the vanilla, then the eggs, one at a time, beating after each addition. Mix in the instant coffee. Into the creamed mixture, alternate adding the dry ingredients and the sour cream, adding half each time. Stir in the chocolate chips.

Pour batter into prepared pan and sprinkle with streusel.

Bake for 35-45 minutes.

This is yummy! I just altered a few things…I didn’t put in coffee, I used mini chocolate chips and I doubled it to make a 9×13 pan.

SO good! The streusel topping is something I will use for numerous recipes from now on. The amount of chocolate chips is just perfect. A little bit of sweet fun but not overwhelming for breakfast. They could also be easy interchanged with other fruits or nuts. I think this coffee cake would be amazing with raspberries.
