Description

Enjoy this wonderful, homemade corn casserole. It’s been in my family forever! It’s a huge hit at potlucks!!!

Ingredients

  • 1 cup Sour Cream
  • ½ cups Melted Butter - One Stick
  • 2 whole Eggs
  • 1 can 16 Oz Whole Kernel Corn (undrained)
  • 1 can 16 Oz Cream Style Corn
  • 1 box 10 Oz Jiffy Corn Muffin Mix
  • 2 cups Swiss Or Cheddar Cheese

Preparation

Mix all of the ingredients together excluding cheese.

Place into a greased pan. Bake at 350 for 30-35 minutes.

Take out of oven and sprinkle cheese on top. Bake for 15 minutes more.

You can omit the cheese and just bake for 50 -55 minutes straight.

Boy, does that sound good! 2 cups of cheese on top seems like a lot, though. I am going to try it with 1 cup, and maybe add in a can of chopped green chiles. Thanks!

I think this is the best corn casserole I’ve every eaten! I make it for our family thanksgiving this year and even the picky people ate it and asked for the recipe! So creamy inside with delicious cheesiness on top! Soooooo good! Definitely a staple at our next holiday gathering…and probably before!
