Description

Easy, moist glazed lemon cake! I got this recipe from my mother.

Ingredients

  • 1 box Yellow Cake Mix (or Lemon, If You Want A Real Lemony Cake; 18 Ounce Box)
  • ⅔ cups Vegetable Oil
  • ⅔ cups Water
  • 4 whole Eggs
  • 1 box Lemon Instant Jello Pudding, 3 Ounce Box
  • 1 Tablespoon Lemon Extract
  • 1-½ cup Powdered Sugar
  • 4 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Melted Butter

Preparation

Mix first 6 ingredients and pour into a greased and floured Bundt pan. Bake at 350 degrees for 35 to 45 minutes (when a toothpick comes out clean). When cake is done baking, remove from pan and let cool on a plate.

Glaze: mix the powdered sugar, lemon juice and butter until smooth, drizzle on cake.

This looks like something my mother-in-law makes. It’s one of my favorites — which is saying a lot for someone who thinks that fruit is fruit and dessert is chocolate. :)

this is deeeeeeelicious!!! I made a few little changes and it was incredible. I added white chocolate chips to the mix, left our the lemon extract but did use a lemon cake mix. I also added the zest of a large lemon to the cake in addition to zest in the icing and it really gave it a fresh and homemeade taste. I will make this again! non-cake eaters even loved it!
