My mom made these when we wanted dessert and she wanted to boost the nutritional value (wink). We never knew.
1. Preheat oven to 350 degrees. Line 12-15 muffin cups with liners or grease with Pam or the like.
2. Melt butter, set aside.
3. Stir together flour, baking powder, soda, salt.
4. Stir in sugar, oats, and chocolate chips.
5. Stir bananas and eggs into butter. Stir into flour until flour is just moistened.
6. Pour 1/4 cup batter into prepared muffins cups.
7. Bake 20 minutes. Cool and frost.
