Description

This bread is full of nutritious blueberries, oats, and applesauce.

Ingredients

  • ⅔ cups Packed Brown Sugar
  • ¾ cups Milk
  • ¼ cups Applesauce
  • ¼ cups Canola Oil
  • 2 whole Eggs
  • 2-¼ cups King Arthur White Whole Wheat Flour
  • 1 cup Rolled Oats
  • 3 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • 1 cup Fresh Blueberries
  • 1 cup Chopped Walnuts (optional)

Preparation

Heat oven to 350 degrees and grease the bottom of an 8 or 9 inch loaf pan.

In the bowl of your mixer, add sugar, milk, applesauce, oil, and eggs. Mix well. Mix in the remaining ingredients except for the blueberries and mix until combined. Fold in the blueberries.

Pour in the loaf pan and bake for 45-55 minutes or until a tester comes out clean. Cool in the pan for 10 minutes and then remove from the pan and cool on a wire rack.

Since I made changes to use up some old bananas I didn’t want to rate the recipe. I left out the applesauce and used a little less brown sugar and milk all to compensate for the 3 1/2 black bananas I hated to just throw out. I will definitely make the recipe again as written though. It came out very yummy with the changes and I imagine it would be still be very yummy as written. Thanks for a nice healthy recipe.

Not a big fan. I feel like it’s missing something. Maybe more sugar, or butter. It has a little bit of a bitter aftertaste, in my opinion.
