This is my version of Greek gyros. I love the gentle lamb taste with plenty of garlic and lemon. Serve over warm flat bread, a fresh slice of red onion, and homemade tzaziki—sooo good! Round out your meal with lemon couscous and a Greek salad, and you have an authentic Greek dinner!
1. Preheat oven to 375F. Line a rimmed cookie sheet with foil.
2. Add all the gyro ingredients to a large mixing bowl. Using meticulously clean hands or gloves, mix the meat mixture thoroughly. Shape into two tubular-shaped logs on the cookie sheet.
3. Bake for 40 minutes. The internal temperature should read 165F.
4. Remove the meat from the oven and tent with foil. Let stand for 15 minutes before slicing. While meat is resting, heat a skillet over medium heat and warm the flat breads. Keep them warm in a clean kitchen towel until you’re ready to serve.
5. When ready to serve, using a meat carving knife or a serrated knife, slice the meat into ¼” slices. Serve with cool cucumber tzaiki, warm flat bread, and sliced red onion.
To make the tzaziki, mix the sauce ingredients well in a small mixing bowl. Refrigerate immediately after using in an airtight container.
