These Peppermint Patties are both gluten free and vegan. And they are good. Even to someone who does not care for the idea of chocolate and mint. Someone who is Jewish and does not celebrate St. Patrick’s Day. Likes them. And ate too many.
In a small bowl, combine coconut oil, agave and peppermint oil, mixing with a spoon.
Smash clumps of coconut oil against the side of the bowl until mixture is smooth.
Freeze mixture for a few minutes until it starts to harden, then remove from the freezer.
Use a 1.5-teaspoon ice cream scoop to measure out little balls onto a parchment-lined plate.
Place plate in the freezer to firm up the mint balls; when firm, remove from the freezer.
Squish balls down into flat little patties on parchment paper.
Dip patties into melted chocolate (use a spoon to drop the patty into the melted chocolate, dip and remove).
Place patties on parchment paper to harden (it takes 10 minutes, though on a summer day, you may need to re-freeze them).

(to sweetebakes ~ trust me, you can’t taste the coconut over the peppermint in these. Coconut oil is extremely mild. =)
Thanks so much for sharing this recipe, Elana! I really, really like these. I {never} buy candybars, but if I were to buy one, a York would be at the top of the list. I love it that I can make these healthy alternatives. The recipe was so simple and made just enough for a small dinner party…they’re great right out of the freezer! I’m going to have to check out some of your other recipes, too…your cookbook looks very appealing. =)
Oh, and I honestly don’t know much about the ado over Agave, yet…I have a very small bottle of it that’s lasted me the last few months, but it tasted fine in this recipe. I would be willing to try raw honey, too…would you use the same amount of honey, or less?

I was wondering if there would also be something to substitute the coconut oil?? I’m not a huge fan of coconut but these sound so good! I have to admit I love checking out your site because my boyfriend’s dad is gluten-free and I’m always looking for new sweets to make him!

These sound awesome. Can you recommend a substitute for the agave nectar? I can’t find it anywhere, not even in the specialty shops.

These are wonderful – and Passover is coming up in a couple of weeks – these are definitely on my menu. Work great as gelt for Hanukkah as well.
