I can never use a whole carton of buttermilk, so I learned how to make my own in the quantities I need, which is awesome and a money saver.
Mix 1 tablespoon of acid (I use lemon juice or white vinegar) with each cup of milk.

Used this on Thanksgiving to make my garlic mashed potatoes! I knew I would never use a whole carton (I only needed about 1/2 cup!) Thanks!

Thank you, Fridaypeach – I learned this from my Mom long ago but had forgotten it. This is the perfect recipe when making pancakes, waffles and even bleu cheese or ranch dressing. A wonderful and simple solution. Many thanks!
