Moist and delicious – for those events where calories aren’t counted.
In a large mixing bowl,with mixer combine carrots, eggs, sugar and oil. Beat until mixed well. Add remaining ingredients and beat well. Pour into 2 greased and floured 9-inch cake pans.
Bake at 350 degrees for40-45 minutes. Cool completely before frosting.
For the frosting, combine all ingredients until mixed well. Frosts two layers.

I made this cake today…Wonderful, delish and very ez. I am afraid I have totally wrecked my weight loss goals. Oh yea calories don’t count on holidays!
