Description

This is the most addictive cake I have ever eaten. My husband and I can polish off the entire cake in one day (or two, if we can hide it from the kids).

It is good with coffee, chai, tea, milk, you name it. Great for breakfast, lunch, dinner, snack, and dessert. Or all of the above.

Try it. I dare you to only eat 1 piece.

Ingredients

  • 1 cup Oil
  • 1 cup Brown Sugar
  • ½ cups Granulated Sugar
  • 2-½ cups Flour
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1 whole Egg
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • ½ cups Powdered Sugar
  • 1 Tablespoon Milk

Preparation

Combine the oil, sugars, flour, and salt. Mix thoroughly.

Set aside 3/4 cup of the mixture for a streusel topping.

To the remaining mixture, add the buttermilk, egg, baking soda, cinnamon, and nutmeg. Mix.

Pour batter into a greased 9×13 pan.

Crumble the reserved streusel mixture on top. (Note: If the streusel topping is clumpy instead of crumbly, add flour and granulated sugar, alternately, until the desired texture is reached. I usually add 2 tablespoons each of flour and sugar.)

Bake at 350 degrees for 25 minutes, or until a toothpick inserted comes out clean.

In a small bowl, combine powdered sugar and milk. While the cake is still warm, drizzle the glaze on top.

Tip: if you do not have buttermilk, use 1 tablespoon of lemon juice and enough milk to equal 1 cup. Set aside for 5 minutes, then use.

I added frozen blueberries to this cake and found that after it had been in the fridge overnight it tasted a million times better! Yum!

All I added was a splash of orange juice into the icing mixture (made a little more icing)… the orange covers the chalky taste of the pwd sugar.. yum !

I made this to take to work tomorrow but of course had to have a tiny taste …. sure hope I have some to take to work tomorrow!!! I baked it in a 9″ round and had to bake it about 10 minutes longer to get the center cooked …. its still plenty moist

Holy cow, is this ever good! I was looking for a recipe to use up some buttermilk before we go out of town for a few days (any excuse, right?) and this fit the bill. YUMMY! I’m almost done with my first piece…probably going to go back for more while it’s still warm. Delicious!

This was okay. Nothing special. I was super excited to try it because of all of the high reviews. My 17-year old likes my other coffee cake better. It’s just the one on the bisquick box.
