Chocolate pudding is the ultimate comfort food. I like to make it when it’s cold and rainy or if I’m just feeling blue. It puts a smile on my face.
In a heavy saucepan, whisk together sugar, cocoa, cornstarch, and salt. Add half of the milk and whisk over medium heat until smooth. Add remaining milk and continue whisking over medium heat until mixture thickens and comes to a low boil. Boil for 1 minute continuously whisking.
Remove from heat and add the grated chocolate and vanilla, stirring until chocolate melts completely. Divide pudding into 7 custard cups and refrigerate uncovered for at least 2 hours. However, if you like your pudding warm, dig in right away!
