Banana Oatmeal Cookie Bars are an easy breakfast, snack, or dessert. Made with real wholesome ingredients.
Preheat oven to 350ºF. Line an 8×8-inch pan with parchment paper and set aside.
In a large bowl, combine egg, bananas, sugar, maple syrup, butter, and vanilla and mix until well combined (you can use a stand mixer or mix by hand).
In a separate bowl, combine oats, almond flour, cinnamon, baking soda, and salt. Add dry ingredients to wet and fully combine—batter will be thick. Fold in chocolate chips.
Bake for about 20–25 minutes, or until just set. Bars firm up as they cool. Don’t over-bake or they will be dry!
