Vegan Blueberry Chia Pudding is refreshing, less sweet, and a perfect fruity breakfast idea for every day.
Add blueberries and non-dairy milk into a blender and blend on high until smooth. Set aside.
In a small Mason jar (or a small glass), add chia seeds, ground flax seeds, maple syrup, and blended mixture. Stir together until combined. Tighten lid or cover with plastic wrap. Place chia pudding in the fridge for at least 2 hours, preferably overnight.
Add coconut flakes, blueberries, and red currants on top. Serve.
