If you think making your own homemade mayonnaise is an intimidating task, think again. You can honestly make a whole batch of mayo in 5 minutes. Let me show you how to do it!
Whisk egg yolk and Dijon mustard in a large mixing bowl.
Add vegetable oil bit by bit, whisking through after each addition. Make sure the oil is completely mixed through before adding any more. The reason the oil must be added slowly is that if you add too much in one go, the mixture may split.
Once all the oil is mixed through, the mayo will be very thick. Add vinegar/lemon juice and whisk through—you’ll notice that your mayonnaise will go brighter in colour and smoother in texture. Finish the mayonnaise by adding a pinch of salt and pepper.
