I made this twice over the last few days. The first time, I followed the recipe exactly, and there were two problems: 1 – they were dry, and 2 – a bit bland. But the recipe was so easy, I decided to try it again. I doubled the spices, and tested for doneness early. My loaves were done after only 40 minutes. With these two modifications, the recipe is definitely a keeper!

This turned out really well, with just the right amount of flavor. I would make this again, and I just so happen to have 2 cups of shredded zucchini left!

This zucchini bread is fantastic! Highly recommended. I also didn’t have pumpkin spice, but the blend of spices that Vanessa posted works great.

So delicious & a great use for all the zucchini busting out of my garden! Everyone really enjoyed it, thanks for the recipe.
For the pumpkin spice I used:
1 tsp ground ginger
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
I also threw chocolate chips in one of the loaves :). Mmmmmmm…
