This ultra-rich instant pudding can satisfy any low carb sweet tooth or chocolate craving for under 80 calories. Just mix everything, and you have a single serving of low carb instant pudding. Or use it as a dip or a rich chocolate sauce. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free.
Place all of the ingredients in a small bowl. Slowly stir with a fork until the wet and dry ingredients are mixed. Whisk with fork until creamy. Serve with a dollop of whipped cream, if desired.
Yields a single 1/4 cup serving. It’s very rich, so a small serving is enough. Multiply as needed.
Use as a dip for strawberries, or thin it a little more and you have an instant chocolate sauce for pound cake or low carb ice cream.
Notes:
• I’ve made this with regular cocoa powders, and it’s not nearly as good as with the Hershey’s Special Dark. It’s worth the effort to get this, if you like a rich dark chocolate pudding.
