Description

The flavors of a creamsicle popsicle in an easy to make sugar free dessert, fat bomb, or snack. Only 1 net carb and about 100 calories per serving. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free.

Ingredients

  • 16 ounces, fluid Diet Sunkist Orange Soda
  • 1 envelope (1/4 Oz. Size) Knox Unflavored Gelatin
  • 4 drops Liquid Sucralose (or Other Liquid Sweetener)
  • 4 ounces, weight Philadelphia Cream Cheese Original, Softened
  • 2 Tablespoons Dream Blends Unsweetened Coconut Almond & Chia Drink (or Other Milk Substitute)
  • 2 Tablespoons Heavy Whipping Cream
  • 2 Tablespoons Swerve Confectioners (powdered Erythritol)
  • ½ teaspoons Vanilla Extract

Preparation

Pour 1/4 cup of the soda into a 2-cup glass measuring cup. Sprinkle gelatin powder over the top and let sit for 1 minute. Microwave mixture for 30–40 seconds, or until gelatin is dissolved. Stir just enough to make sure it’s all mixed up and dissolved.

Add liquid sweetener and enough soda to bring the total up to 2 cups of mixture. Stir to mix well. Pour evenly into 5 glass serving containers with lids (I use 4-ounce mason jars). Refrigerate until gelatin is fully set, at least 2 hours.

In a small bowl, soften cream cheese for about 40 seconds in the microwave, or until it is melted and can be stirred. With a small whisk, mix in milk substitute, cream, powdered sweetener, and vanilla. Whisk until well blended. Spoon about 1 tablespoon of the topping onto each of the set jello cups. Leave as a layered dessert, or stir the cream cheese topping in a bit to create swirls in the jello. Return to refrigerator to fully chill before serving.
