The most perfect thing for those cold winter days.
Heat oil in a large, heavy pot over medium-high heat. Add onions, peppers, and garlic; saute until onions are soft. Add spices, stirring constantly for 2 minutes. Strain 2 cans of black beans, leaving one can with liquid. Add all three to the pot along with the tomato sauce. Bring to a boil, stirring occasionally. Reduce heat to medium-low and allow it to simmer for about 15 minutes.
Top with cilantro, sour cream, green onion, cheddar cheese, and Fritos.
