Barley with Green Asparagus and Spinach
Cook barley in water until soft, about 30 minutes. Boil chopped asparagus for about 3–5 minutes, until cooked but still a bit crisp.
Preheat a big skillet and roast garlic in oil for 1 minute. Add asparagus and cook for another 5 minutes.
Add spinach, barley, salt and pepper. Stir everything well until spinach wilts.
To serve, adjust seasoning to taste and sprinkle roasted almonds on top.
