Tangy meets creamy in this simple chicken salad for one. Just 10 minutes total prep time. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free.
If bacon crumbles were stored in the refrigerator or freezer, put in small mixing bowl and warm in microwave for 15–20 seconds.
Cut all of the remaining salad ingredients and add to the mixing bowl with the bacon crumbles.
Make the dressing, pour over salad, and mix well.
Serve in a bowl as a salad, or spoon onto lettuce cups.
Note: If you can’t find Mrs. Dash Fiesta Lime Seasoning, try using a favorite salt-free taco seasoning to taste.
Tip: I use leftover chicken or a grocery store roasted chicken for this salad to keep it simple and quick. If you want to make this ahead, you can make several servings without the avocado, then add avocado at the time you serve the salad.
I don’t get any commission or kickback for products I use or mention in my recipes. Brand names are included only to more accurately assess nutritional estimates, which are per serving based on exact ingredients I used. Nutrition estimates are calculated per serving with My Fitness Pal’s online recipe analyzer using the exact brands I use. The recipe is stored there and available to MFP users for logging in their food diaries.
