Fried catfish is a family favorite, and can be enjoyed again once on Atkins maintenance, or on other low carb programs. Suitable for Atkins maintenance, low carb, diabetic, low glycemic, gluten free.
Rinse catfish fillets and shake off excess water. Do not pat dry.
Sprinkle some Louisiana Fish Fry on each side of each fillet. Don’t be too generous, or you will run out, and the carb count will climb quickly. This is very spicy breading, so a little goes a long way.
Heat a deep skillet and add enough of your oil of choice to come up at least halfway on the fish (or use a deep fryer, if you have one). Heat oil to 350ºF and carefully place each fillet in the pan. Cook for 3–4 minutes, then carefully flip over to cook the other side. Fish is done when the meat is white all the way through the thickest piece, and the filets are a golden brown. Remove thinner pieces as they are finished.
Remove to paper-towel-lined platter. Serve with a lemon quarter. A serving is 1/4 of the total batch (approximately 4 ounces).
Note2:
1. This is a very low fat dish. If you are following Atkins or LCHF, serve with a high fat side, such as coleslaw with a mayonnaise dressing to improve the macros. Or make a lemon-mayo sauce for the fish. Count any additional fats and carbs.
2. The fillets I get are rather large, with a thick end and a thin end. I cut those in half to make two fillets. The thinner pieces will cook a lot faster than the thicker pieces, so can be taken out of the oil sooner.
3. I don’t get any commission or kickback for products I use or mention in my recipes. Nutritional estimates are per serving based on exact ingredients I used, calculated with My Fitness Pal’s online recipe analyzer. The recipe is stored there and available to MFP users for logging in their food diaries.
4. There will be some additional fat due to what is soaked up by the corn flour during the frying process. I am unable to determine how much that will be.
