Mash bananas with a fork and set aside.
In another bowl, add oatmeal, sunflower seeds, coconut flakes, raisins, cinnamon, and salt. Mix in mashed bananas and set aside for 5 minutes.
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
With a tablespoon, spoon mixture into your hands and form cookies. Arrange on the baking sheet. Bake for 15 minutes until golden brown.
