My healthy dessert for today is raw vegan white chocolate truffles. These delicious truffles are made of a coconut and hazelnut mixture covered in white chocolate. You can use any type of nuts, or you can just double the amount of the shredded coconut. I put a glace cherry (candied cherry or maraschino cherry) inside, but for a healthier option, you can put a dried cherry or a whole hazelnut.
Grind hazelnuts and shredded coconut. Add coconut oil, maple syrup, milk or water, and process again. Refrigerate mixture for about 1/2 hour.
Make small balls out of the mixture, putting a cherry inside. Freeze for another 1/2 hour.
Melt the chocolate, add cinnamon and roll the coconut balls into it. Put them in the freezer until the chocolate is hard.
