Description

Apples, pecans, maple syrup and a crumb topping! A super tasty way to start the morning.

Ingredients

  • 8 Tablespoons Butter, Softened
  • ½ cups Granulated Sugar
  • ½ cups Brown Sugar
  • 2  Eggs
  • ¼ cups Applesauce
  • ½ cups Maple Syrup, Divided
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Allspice
  • 1 teaspoon Salt
  • 1-½ cup Apples, Finely Diced
  • ½ cups Pecans, Chopped
  • FOR THE CRUMB TOPPING:
  • ¼ cups Flour
  • ¼ cups Brown Sugar
  • ½ teaspoons Cinnamon
  • 4 Tablespoons Butter, Melted

Preparation

Preheat oven to 350ºF.

In bowl of a mixer combine butter and both sugars. Beat with a paddle attachment until well blended, about 1 minute. Add eggs and mix until fully combined, 1–2 minutes. Add applesauce and ¼ cup maple syrup. Mix until combined, about 1 minute.

Add flour, baking powder, cinnamon, allspice, and salt. Mix until dry ingredients are fully combined, about 3 minutes. Slowly stir in the apples and pecan until fully incorporated.

Divide the batter among 24 muffin cups lined with a paper lining.

For the crumb topping, in a separate bowl, combine flour, brown sugar, cinnamon and melted butter for the crumb topping. Mix with a fork or your fingers. Sprinkle the crumb topping evenly over the muffins.

Drizzle the remaining ¼ cup syrup over the top of the muffins. Bake at 350ºF for 15–18 minutes until an inserted knife comes out clean. Cool on a wire rack. Enjoy!
