Easy gluten-free and sugar-free banana loaf made with almond flour.
Heat oven to 180ºC (355ºF). Prepare a medium loaf tin.
Mix al the wet ingredients (mashed bananas, eggs, maple syrup, vanilla). In a separate bowl, mix all the dry ingredients.
Mix everything together and scoop into the loaf pan. Even out the batter and decorate it with fresh banana and nuts.
Bake the loaf for 40 mins or until an inserted fork comes out clean. Let cool on a wire rack before loosening the sides with a knife.
Enjoy with whipped coconut cream.
