This recipe was handed to me by a local customer at our Farmers Market! Honey and butter combined with cream and sugar make a refrigerator stable honey butter that is smooth, creamy and good on everything from biscuits to ice cream! It’s easy to change this up by using a different extract, such as almond and adding other items, like cinnamon! Makes a great gift!
In a large saucepan, combine sugar, cream and honey. Heat on medium high heat and stir until it comes to a boil. Boil for 1 minute. (Note: This will boil up and that is why a large saucepan is important.)
Put softened butter in a blender or food processor. Pour the hot mixture over the butter. Blend on medium speed until mixed well. Add vanilla, blend again. Pour mixture into containers, cover and let cool in the refrigerator. Keep refrigerated. (Canning jars are perfect.)
Ideas for serving: warm bread, biscuits, toast, oatmeal, pancakes, waffles, ice cream, etc.
