Description

Search no more—this truly is the best Banana Nut Bread recipe. Flavorful and moist with hints of cinnamon and nutmeg with the crunch of luscious walnuts.

Ingredients

  • 1 cup Sugar
  • ⅓ cups Unsalted Butter, Softened
  • 2  Eggs At Room Temperature
  • 1-½ cup Mashed Ripe Bananas
  • 1 teaspoon Vanilla
  • ⅔ cups Water
  • 1-⅔ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Nutmeg
  • ½ teaspoons Cinnamon
  • ½ teaspoons Salt
  • ⅓ cups Chopped Walnuts, Plus More For Top If Desired

Preparation

Preheat oven to 350°F. Spray or butter bottom only of an 8 1/2 x 4 1/2 inch loaf pan.

In a large mixing bowl, cream together sugar and butter with a fork. Stir in eggs until well-blended. Add bananas, vanilla and water to the bowl and blend together with a hand mixer until all large pieces of banana are broken down.

Add remaining dry ingredients, except nuts, stirring to completely incorporate. Stir in chopped walnuts.

Pour mixture into pan and sprinkle with chopped walnuts, if desired. Start checking bread at 50 minutes. Continue checking every 8 minutes until a wooden pick or cake tester comes out of the center of the bread clean.

Let bread cool for at least 15 minutes before trying to remove from pan. (Good luck with that!)

Notes:
1. Walnuts can be substituted for any nut of your liking like pecans or macadamia nuts, or omitted if desired
2. Check your Banana Nut Bread at the 40 minute mark. If it looks like it may be getting too brown, place a sheet of aluminum foil on the top of the loaf pan through the end of cooking.
