Who doesn’t like a yummy cake? This cranberry and walnut cake is easy and very nice. The tropical fruit juice really adds flavor.
Preheat oven to 180ºC (355ºF). Grease a 9×5 inch loaf tin.
In a bowl, mix flour, sugar, baking powder and bicarbonate of soda. Stir in cranberries and walnuts.
In another bowl, whisk together egg and tropical juice. Pour into the flour mixture and stir until blended together.
Pour mixture into the loaf tin. Bake until an inserted skewer comes out clean, about 50 minutes. Allow to cool in the tin for 15 minutes and then place on a wire rack to cool completely.
