Description

Chocolatey treats made with After Eight mints and crushed cookie crumbs.

Ingredients

  • 250 grams Chocolate Digestives (or Any Cookie)
  • 185 grams After Eight Mints (or Any Other Mint Thins)
  • 200 grams Cream Cheese
  • 200 grams Milk Chocolate

Preparation

Crush cookies in a food processor. Reserve around 2 tablespoons and set aside.

Melt the After Eights and then beat with the cream cheese. Mix in the crushed cookies and freeze for around 30 minutes to harden. Roll into balls and place on a baking tray lined with grease-proof paper. Refrigerate for another 30 minutes.

For the coating, melt the chocolate and dip each ball in. Place back on the baking tray and sprinkle with reserved cookie crumbs. Return to the fridge until chocolate has set and keep refrigerated until ready to eat. Enjoy!
