Great condiment to keep on hand in the refrigerator.
In a sauce pan on medium high heat, add water, sea salt, peppercorns, and all the citrus zest and juice. Cook 5 minutes, stirring. Remove from heat.
Cut stems off each pepper and slice into 1/8-inch pieces. Remove as many seeds as you want (based on your tolerance for heat). Add pepper slices to the citrus brine, stir, and allow to come to room temperature. Place in a airtight jar or container and refrigerate until ready to use.
This is always available in my refrigerator. It’s a great condiment! I have used it in salads, on top of tacos, and many other dishes.
