These are a delicious, homemade, sweet snack which are easily tailored using different jams.
Preheat oven to 180ºC (355ºF) and spray a baking tray (26 cm x 38 cm or 10 inch x 15 inch) with nonstick cooking spray.
Cream butter/margarine and sugar until light and fluffy. Add egg and vanilla extract and mix well. Sift in flour, baking powder and salt and mix well. Add oats and mix until it forms a soft, crumbly dough (get your hands involved towards the end).
Press ¾ of the dough into the baking tray using the back of a spoon. This takes a little while as you are aiming for a pretty thin layer.
Warm the jam slightly in the microwave to make it easier to spread and spread evenly over the dough. Make a ball with the rest of the dough and grate it evenly over the jam layer.
Bake for 20 – 25 minutes (until golden on the edges). Let it cool for a few minutes and cut it into 40 bars. I used a pizza cutter, and a knife to do the edges.

Cheryl, I agree with LavandulaLady, we need measurements in cups & spoons. I’ve tried before to convert the cups and teaspoons/tablespoons and didn’t get them. Please if you could update the measurements for us. I’d love to make these bars, they sound so delicious! Thank you!

Cheryl; I don’t know what country you live in, but here in the USA I would say that most people don’t have a scale to weigh ingredients. You would do better to give your measurements in cups & spoons.
