In 15 minutes, you’ll have a dozen gluten-free cookies to enjoy. Doesn’t get easier than that!
Preheat oven to 350ºF. Line a large baking sheet with parchment paper. Set aside.
In a food processor, add oats and pulse several times to coarsely chop. Add bananas and process several minutes to combine. Gently fold in your desired mix-ins, such as chocolate chips, nuts, raisins, coconut flakes, etc. (We love mini chocolate chips in ours.)
Drop heaping spoonfuls of oat mixture onto sheet pan and gently press down with back of spoon. Bake 15 minutes or until golden brown. Allow to cool. Store in an airtight container until ready to serve.
Makes one dozen cookies. Enjoy!

Hi Cheryl! Three ingredients sounds good to me! Will have to give these a try!
